Boulanger (Baker)
On his way to the stable, wearing his white apron wrapped tightly around his waist, the baker, carries a basket of bread on his shoulders to present to the Holy Family. What is any better than a fresh baguette right out of the oven! Several kinds of bread are made in Provence: ‘la banette’ – a small ‘French Loaf’; ‘La Fougasse’ – a round loaf crisscrossed on the crust; – the ‘Pain Fendu’ an oval loaf divided down the middle; the Pain ‘Calendal’ a round country loaf. This is marked with a cross and is baked only at Christmas time.
