In bygone days (and well before the refrigerators were invented!), ice was cut up in the winter, in frozen water reservoirs located on the heights, than stored in ice houses, which were large mostly underground dry masonry buildings. These ice houses served as storage during the rest of the year. Ice carriers would bring the precious material to surrounding towns. They often carried the ice on their backs at night, and this was sometimes a second job for local residents. We find remains of these ice houses in the massifs around Marseille, such as the Sainte Baume.
