The beekeeper is the one who raises bees and who knows the science of them. Its work is to understand the government of bee colonies, the establishment of the apiary, the choices of hives to establish the swarms; monitoring swarming, harvesting honey and wax as well as treating bee diseases.
Historically, he made different models of hives. Some were built with chestnut planks, others were made of a hollowed-out tree trunk, still others were made of cork logs or straw.
Provence has been known for its beekeeping activity since at least the 15th century, but it was at the beginning of the 19th century that modern beekeeping developed.
The Mediterranean flora and its numerous essences such as lavender offer Provençal honeys distinctive and remarkable aromatic flavors.
